I have a new hobby. And it's fattening. And trendy. And both of those things would normally deter me, but it also happens to be SUPER DELICIOUS, so I'm fine with it. This hobby is called Cupcakes.
This basic buttercream has been the base for all of my frostings lately, from chocolate, to lemon, to peanut butter. The possibilities are endless!
Vanilla Buttercream Frosting
From The Taste of Home Cookbook
1/2 cup butter, softened (I've used margarine)
4-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
5 to 6 tablespoons milk
Cream butter until light and fluffy. Beat in sugar and Vanilla. Add enough milk to achieve desired consistency. (I also add a pinch of salt.)
** For chocolate frosting, substitue 1/2 cup of cocoa for 1/2 cup confectioners' sugar. You may need more milk.
Enjoy!
